When trying to import data, I assigned an 'Account Manager' and a 'Sales Channel', but after importing, these do not display within the Control Panel. Is there any reason as to why this might be? Thanks

Might be an idea to check out your import process to see if there's any indication what might have gone wrong. You'll see them in Settings & Tools > All Settings & Tools > Import/Export Processes. Find your import process and expand it to see any messages about the import that tell you what might have gone wrong.
