To keep a local backup of my site (via FTP) which folders do i need to back up?
Anything else?
(also if i destroy something - can Neto support restore my site back to x number of days ago?)

The theme folder doesn't change, so that only needs to be backed up once (or not at all if you're using a built-in theme). Same goes for printdocs - just back up what you've changed.
You could backup the assets folder but it's huge and mostly cached thumbnails.
The reality is your important data in Neto is your products, customers, orders and content pages. These can't be accessed by FTP (they're in the database) but most can be exported to CSV on a schedule. I have set up a weekly backup of our products and customers which is automatically sent by FTP to our local server.
I'm pretty sure Neto take regular database backups, @Curtis Perri? may be able to confirm.
Erik is right, we do take regular backups that contain your last 30 days of data. Just be aware that if you want data restored it is a billable service.
Yes, as with most e-commerce systems - once you have a backup of your custom theme, and any other files you change - then all you need to backup is your data.
Assuming you have product images locally anyway.
How often though is "regular" for the data backup? Daily?
