As the same way the customer instructions are seen in every order, this could be applied for internal notes as well – as we create plenty of orders from our backend.

Just confirmed with our team: For the following field in orders:
There is a way to set a default value for ALL orders, however setting up a default standing value for a specific customers orders only, similar to the Default Customer Instructions, unfortunately is not possible at this time.
