Layby editable orders and payment through POS

We offer espresso machine servicing, which has an upfront fee of $88, a total fee of $135 and additional costs for parts and additional labour for more difficult fixes. We'd like to be able to ring a transaction up as a layby, take the $88 payment with $47 remaining, and then add relevant parts to the order via POS (say $30 of parts) at a later date. When the customer returns they will pay the $77 outstanding, and receive an itemised receipt from via the POS. The customer receives a receipt with full details of 1) first payment and 2) all payments on the one order. Our service team member can make relevant adjustments to the order via the simple POS interface, rather than needing to have training in more complex order management.
