The ability to add multiple kitting groups per sku added to a kit would be extremely useful and allow for a better customer user experience as it would allow the customer to narrow sku's using multiple kitting group options. For example. I have a pair of "Lion Themed Shoes" in kitting group "Shoes and Socks" but as those same shoes are part of my Safari range as well i would want to add them to the additional Kitting Group of "Safari Collection". Why- So the customer when perusing kitted items will know that the shoes exist as they are part of the "Shoes and Socks" kitting group but will also know that is these shoes are part of a bigger collection "Safari Collection" meaning more chance of upsell etc. I hope this makes sense.
